Strawberry Shortcake Scones
1 pouch Sticky Fingers Strawberry Scone Mix
2-3 cups sliced strawberries
1 cup heavy whipping cream
2 tablespoons granulated sugar
Powdered sugar for garnish
- Prepare 1 pouch of Sticky Fingers Strawberry Scone Mix as directed, but drop 8 scones onto prepared pan. Bake for 17-20 minutes, or until golden brown and firm to the touch. Cool completely on pan. Slice cooled scones in half horizontally.
- Whip heavy cream and granulated sugar together on high speed until medium peaks form, about 3-5 minutes.
- Place sliced strawberries on bottom half of scone. Spoon whipped cream over strawberries, then top with remaining half of scone. Sift powdered sugar over scone, if desired. For a more elegant look, pipe whipped cream using a large star tip.
