Ingredients:
- 2 Cups + 4 Tablespoons of Sticky Fingers Buttermilk Pancake Mix
- 1 Large Zucchini, grated
- 1 Large Egg, lightly beaten
- 1/2 Cup Buttermilk or Milk (might need to be adjusted)
Directions:
- Heat a pan to medium heat, and grease pan with butter or oil
- Combine all the ingredients, except the milk.
- Add the milk slowly until desired texture is achieved. You might need more or less milk because of the water content of the zucchini.
- Spoon 1/4 cup of the batter onto the prepared pan, and cook on each side about 3-5 minutes.
- Serve warm with sour cream or Greek yogurt based dipping sauces
